Gourmet Grilled Cheese Sandwich

This recipe was sent to me by Deb. I made it last week and I know why she calls it Gourmet Grilled Cheese. I used French Onion Laughing Cow but I think any flavor would be great. I also added grilled mushrooms.  I served mine with a bowl of Healthy Choice Tomato Soup. Great for these cold rainy days we have been having.

Gourmet Grilled Cheese Sandwich

1 serving is entire sandwich=3 points plus

2 slices Sara Lee Delightful Bread (I used the wheat bread)

2 wedges Laughing Cow Cheese (I used herb & garlic)

1/4 of a large onion, thinly sliced

1/4 of a large red bell pepper, thinly sliced

Non-stick spray

Salt and pepper

Heat a saute pan over medium heat until hot. Spray with non-stick spray and immediately add sliced onions and bell peppers. Season lightly with salt and pepper and saute, stirring frequently, until onions and peppers caramelize and are soft (can take about 20+ min--add additional non-stick spray and small amounts of water to keep veggies from sticking to pan and burning). Turn heat off and cover veggies to keep warm.

Place the two wedges of Laughing Cow cheese in a microwave-safe bowl and heat for about 10 seconds to soften. Spread one wedge onto inside of each slice of bread, so you have both slices covered with cheese on one side. Mound the caramelized veggies onto the cheese on one slice of bread. Place other slice of bread over veggies with the cheese side down so you have bread, cheese, veggies, cheese, and bread.

Heat a small non-stick skillet over medium heat until hot. While the pan is heating, lightly spray one side of the sandwich with non-stick spray, then spray skillet. Place sandwich into pan with sprayed side down. Watch carefully to prevent burning, as bread will toast quickly. Cook until bread is toasted, then before turning sandwich over, spray top bread lightly with non-stick spray. Spray pan also with non-stick spray before turning sandwich over to toast the other side.

This sandwich is creamy, delicious and very satisfying. You will never know it is a reduced calorie sandwich. Serve it with a bowl of WW Garden Vegetable Soup for a hearty 4 points plus meal!! A real winner!
