Meatless Monday Meals

Oatmeal, banana, fat free milk= 4PP
Well girls thought I would show you a day of my Meatless Mondays. I started this 2 weeks ago and I call it the calm after the storm. In other words I eat more meat on the weekends than usual and Monday is my day to calm down and get back on track.  I also found a site that I frequent that is called Meatless Monday. I have really started looking forward to  my Meatless Mondays because of this. I hope some of you will join me and share your meatless meals with us all.


Morningstar Farms Chicken pattie, thin bun, laughing cow cheese wedge, stir fried onion & peppers, spinach, mandarin, Newman's own ginger sesame dressing= 8 PP
Brown rice, stir fried veggies, fish sauce, soy sauce, sweet and sour sauce= 3PP


Pumpkin angle food cake, Fat free milk= 4PP



Snacks for the day where: Banana, thin bun, better n peanut butter, baby carrots Weight Watchers dessert.=10PP

    Have you tried my Gourmet Grilled Cheese? That's meatless and would work great on your Meatless Mondays!

  3. Just heard some great news regarding the Gourmet Grilled Cheese yesterday at my WW meeting. Apparently the Laughing Cow Lite Cheese wedges are only 1 pp for
    2 wedges of cheese!!! I had entered the nutritional info on my WW calculator for 1 wedge and it shows 1 pp, but if you double the info (fat, carbs, fiber, & protein), sure enough, it still shows 1 pp for 2 wedges!! It has to be the Lite versions of Laughing Cow, but there are several you can use. So, now my Gourmet Grilled Cheese is only 3 pp per sandwich! Hooray! Thank you WW leader for sharing that info with the group--we were all very excited!

    An update--lost another 2 lbs--am now at 11 lbs lost! I owe you some thanks for helping me on this journey with your great recipes, articles, and encouragement! Thanks!

  4. Great Job Deb. Another 2 lbs. You go girl. Hope to meet you someday. It would be fun to sit down over a cup of tea and talk about our journeys.

    I knew about the Laughing Cow Cheese. Should have shared that information. It's great when your making something you want really cheesy. Yes I did make your Gourmet Grilled Cheese. It is wonderful and yes it will be on one of my meatless monday menus. I will post the Pumpkin Cake recipe on Thursday or Friday. I don't have scanner and my WW friend Mary does. So she scans it and sends it in an email and all I have to do is copy and paste.

    I used the fat free Greek Yogurt in the biscuit recipe. I'm sure it would make a differnce in low fat, fat free, because it would make a differnce in the points. They are really really good. Hope you enjoy. Of course the creamed dried beef was amazing. It's something my mom made often when I was growing up. Brought back some great memories.

  5. I would be fun to meet you some day soon. I know you mentioned that you shop in Chico every now and then. When it quits raining (didn't think I would say that this year), it would be fun to meet for a walk in lower Bidwell Park and then head over to the T-Bar for a nice glass of iced tea. Have you ever been to the T-Bar? (It used to be called Teaz Me). They have some fun sugar-free tea choices--regular iced, hot tea, frozen, sparkling, flavored iced . . . It's a fun place to meet w/friends and just chat over tea and/or a nice salad. Let's try to make time in the near future to meet.

    Thanks for the clarification on the biscuits. I have everything to make them and will try them soon.

    Can't wait to get my hands on that Pumpkin Angel Food Cake recipe!!

    I know what you mean about not having time to eat all the good recipes. Mary sent me a recipe for baked Crab Cakes, I was wondering if it was the same one you tried?

  7. There are so many crab cake recipes out there. Mary's recipe is probably not the same. My recipe came from the Flavor Set Point Cookbook. If you try Mary's recipe let me know if you like it as I would love to have a decent low cal crab cake recipe.

    I made the Braised Cabbage recipe and it was very good. Great side for the corned beef or hearty enough on its own since it has the white beans in it. Also made a Chicken Tortilla Casserole that was very good with a nice serving size.

    The T-Bar is actually just down the street from the strip mall you are thinking about. It is in the same area as Morning Thunder Cafe and Christain Johnsons Floral Shop. As far as meeting is concerned, I'm not sure what your schedule is like, but my son will be back in school next week, and then I am available from 9:30a-2:00p everyday except Thursdays. All day on Saturday if that works better for you.
