Sunday 6 Point Plus Chicken Dinner

 3 Apple Tarts = 1 Point Plus

21 Wonton Wrappers
1 can Sugar Free Apple Pie Filling

Place wonton wrappers in mini cupcake pan. Pour pie filling into bowl and cut into smaller pieces. Add cinnamon to taste. Fill wonton wrappers and bake at 400 degrees for 12-15 minutes. MMMM Good
                                                4 oz Grilled Chicken , Squash, sliced Tomato= 5 PP

I made the squash in my iron skillet. I sprayed with butter flavored non-stick spray. Sliced one yellow squash, 1/2 onion and chopped up some fresh basil I had in the fridge. Saute on medium heat till tender. The squash was really good with the basil and onion.

Next time I'm going to make my chicken into a roll up with Basil and Laughing Cow Cheese.
1-4 oz. Chicken Breast
                           1- Swiss Laughing Cow Cheese Wedge
Fresh Basil, chopped

Pound chicken breast flat. Mix cheese wedge and basil together. Place in center of breast. Roll up, secure with toothpick and cook on medium in skillet till done. I think the basil and cheese will really enhance the flavor of the chicken and served with the basil squash. Well what more can I say. I'll let you know how the chicken works out. I may need to bake it? We'll see.

    In an earlier post you wrote about a grilled cheese sandwich made with Sara Lee Delightful Bread and a wedge of Laughing Cow Cheese. I thought this sounded like a wonderful remake of a true comfort food. And, I have found a way to "kick it up a notch" (as Emeril would say) with wonderfully delicious results!! My best friend often makes her version of a "gourmet grilled cheese" and I have used her idea, combined with your WW grilled cheese sandwich to make a sandwich that was a BIG hit with me and my husband. Here it is . . .

    Gourmet Grilled Cheese Sandwich

    1 serving is entire sandwich=4 points plus

    2 slices Sara Lee Delightful Bread (I used the wheat bread)

    2 wedges Laughing Cow Cheese (I used herb & garlic)

    1/4 of a large onion, thinly sliced

    1/4 of a large red bell pepper, thinly sliced

    Non-stick spray

    Salt and pepper

    Heat a saute pan over medium heat until hot. Spray with non-stick spray and immediately add sliced onions and bell peppers. Season lightly with salt and pepper and saute, stirring frequently, until onions and peppers caramelize and are soft (can take about 20+ min--add additional non-stick spray and small amounts of water to keep veggies from sticking to pan and burning). Turn heat off and cover veggies to keep warm.

    Place the two wedges of Laughing Cow cheese in a microwave-safe bowl and heat for about 10 seconds to soften. Spread one wedge onto inside of each slice of bread, so you have both slices covered with cheese on one side. Mound the caramelized veggies onto the cheese on one slice of bread. Place other slice of bread over veggies with the cheese side down so you have bread, cheese, veggies, cheese, and bread.

    Heat a small non-stick skillet over medium heat until hot. While the pan is heating, lightly spray one side of the sandwich with non-stick spray, then spray skillet. Place sandwich into pan with sprayed side down. Watch carefully to prevent burning, as bread will toast quickly. Cook until bread is toasted, then before turning sandwich over, spray top bread lightly with non-stick spray. Spray pan also with non-stick spray before turning sandwich over to toast the other side.

    This sandwich is creamy, delicious and very satisfying. You will never know it is a reduced calorie sandwich. Serve it with a bowl of WW Garden Vegetable Soup for a hearty 4 points plus meal!! A real winner!

  2. Deb, The Grilled Cheese sounds so good. Think I will make it for dinner tonight along with a bowl of my Cabbage Soup. Thank you for sharing. I will shoot a picture and enclude it with my post of the recipe.
